Nuts for Black Cod

I often struggle with the idea of putting the “man” back in fish. It seems that there is a common misconception that fish is feminine, or metro-sexual if you will. While it is true that it is lower in calories and high in omega 3, it is hearty and yes, wait for it, filling (especially if you add nuts).

The following is my tried and tested way into a man’s heart.

What you need:

• One big hunk of black cod
• Walnuts
• Minced Garlic
• Olive Oil
• A pinch of Sea Salt
• 1 tsp Honey
• Tin foil or a broiling pan

1) Pre-heat oven to broil
2) In a small pan on low heat, heat a dollop of olive oil and slowly introduce walnuts and honey. Careful as to ensure you do not burn your nuts. When slightly browned, take nuts off the element and set to cool.
3) Using a mallet or your fingers, crush nuts
4) Lay black cod on a generously sized tin foil sheet, folding up the edges to ensure that there is no spillage
5) Cover the Cod in olive oil, minced and seasonal salt and broil for 5-7 minutes
6) Remove Cod from the over and garnish with walnuts
7) Serve and enjoy
