Jerked Frog Legs

2 packs frozen frog legs, thawed and drained
8 tbsp dry jerk spice
1 tbsp cornmeal
2 tbsp cayenne pepper
1 dry red chili pepper
1 tbsp sesame oil

cooking oil for deep frying
*2 inches of cooking oil in a small pan for deep frying.

Grind up the dry ingredients in a pestle and mortar. In a large bowl toss the frog legs and sesame oil together. Now mix 8 tbsp of the dry spice well, and sprinkle onto the frog. Let marinate for 30-45 mins.

Sprinkle the remaining spice mix onto the frog legs just before deep frying. Deep fry the legs on medium high heat for 3 minutes.

Remove from the pan and rest on a paper towel to remove excess oil.

Avocado Salad

3 avocados – 3?4 mashed , 2 1?4 diced
1 juice of a lime
1?2 juice of a lemon
1 tbsp olive oil

zest of 1 lime
zest of 1?2 lemon

1?2 cup chopped cilantro
3 tbsp finely chopped onion
1?2 cucumber chopped
1 tsp salt (or to taste)
1?2 tsp black pepper

1?2 quart cherry tomatoes, chopped

Mix the mashed avocado, lime and lemon juice, olive oil and chopped onion in a bowl; let sit for 10 minutes then toss in the freshly diced avocado to stop the oxidization. Add the cilantro, cucumbers and tomatoes in, mix well. Put in salt and pepper to taste.
